Spicy Black Bean Burger


This is one of my favorite recipes to make and easily interchangeable with different beans! I have used lentils, kidney beans, and garbanzo beans in place of black beans but still flavor them with the same seasoning combination.

The spiciness is perfect for cooler months and a favorite during the summer when my family likes to barbecue. Due to different dietary preferences, I still have managed to find a vegan burger recipe that my family and friends love to eat.

In addition to this burger, I really enjoy the fresh guacamole that works well as a substitute for ketchup and adds some extra protein.

A spicy dish that will satisfy any hungry stomach and perfect for those moments when its time to barbecue and gather with family and friends.

Ingredients
  • 1/2 lb of black beans, soaked overnight in water and salt
  • 2 cups of water
  • 1 Tbsp extra virgin olive oil 
  • 1 cup of oats ( or 3/4 cup of oat flour)
  • 1/4 cup of white onion, finely diced (or try grating 1/2 of an onion!)
  • 3 cloves of garlic, minced
  • 1/2 cup bell pepper, finely chopped 
  • 1/4 cup of corn
  • salt & pepper to taste
  • 2 tsp of onion and garlic powder
  • 1 1/2 tsp of curry powder
  • 2 tsp cumin
  • 1 tsp paprika powder
  • 3 Tbsp of milled flaxseeds +  7 Tbsp water, to make a flax egg

   Guacamole 
  • 1 avocado, mashed
  • 1 tomato, chopped
  • 3 cloves of garlic, minced
  • 2 Tbsp of corn (optional)
  • 1/4 tsp brown sugar
  • 1 1/2 Tbsp apple cider vinegar
  • salt and pepper to taste
  • 1 dash of red pepper flakes (optional)
    Instructions
    1. Combine the 3 Tbsp of flaxseeds and 7 Tbsp water to make a flax egg. Set aside.
    2. To make the guacamole, mash the avocado and mix together with the tomato, garlic, corn, brown sugar, vinegar, and salt and pepper. Set aside in the fridge.
    3. Cook soaked black beans from previous night in 2 cups of water, salt and pepper, and 1 tsp garlic and onion powder for about 45 minutes. You want the beans to be mushy so they will bind together easier.
    4. In a medium mixing bowl, mash the black beans with a fork, using any additional liquid when needed (or you can blend the black beans in a blender as well).
    5. Combine the onion, garlic, bell pepper, corn, curry, paprika, 1 tsp garlic and onion, and cumin with the beans, mixing well. 
    6. Now, stir in the oats and flax egg with the beans, veggie, and season mixture.
    7. Heat 1-2 Tbsp of olive oil in the skillet over medium-low heat. 
    8. Make patties with the bean mix and place them in the skillet for about 5 minutes on each side, or until a nice deep brown crust forms.
    9. Top bun with the burger and guacamole! Enjoy :) 
    Notes
    *You can use 1 can of black beans too. Just drain and save a little liquid to make the beans smooth when it is time to mash or blend in the blender.
    **I have added mashed sweet potatoes to these before and they are delicious! They add a nice sweetness with the spicy flavors, if you want to play around with the recipe.
