Lentil Burgers!
One of my favorite recipes to make is lentil burgers! It is full of flavor and I use oatmeal to replace the eggs, which adds some extra nutrients too. (There is another one that is my favorite, Curried Sweet Potato Garbanzo Burgers. I will share soon!!) A few times I have experimented with combinations of diced carrots, tomatoes, chopped spinach, and diced *potatoes or an 8 oz can of corn and diced tomatoes which I cooked the last 15 minutes with the lentils so they were softened. (*Cook the potatoes longer..about 30 minutes). I have even replaced the bell pepper and used broccoli with carrots! It all depends on what you want to add and how creative you want to get :) So I have the basic recipe below that you can mix in your favorite kinds of veggies. Don´t be afraid to change it up!
Another important thing that I like to do with my burgers (and a suggestion from the vegan chili recipe), is to add in another round of spices after cooking the lentils to prevent adding in lots of salt to give it flavor! Anyways, I have served these burgers with sweet pickled beets and in the past, a mango ketchup too. Just let me know if you want me to share those as well! They're super easy!
Ingredients:
-Half pound of lentils
-1 yellow onion
-1 bell pepper
- 4 cloves of garlic
- 2 tspn Paprika
- 2 tspn Cumin
- 2 tspn Oregano or Italian
- *1 tspn of Thyme if you use oregano
- 2 tspn Curry Powder
- 2 pinches of red pepper flakes (optional)
- pinches of Salt
- Pepper
- about 1/2 cup of oatmeal (you can use rolled oats or even corn flour too if you want)
- teaspoon of live oil for cooking in the skillet**
Instructions:
1. To make these delicious burgers, first chop the onion and mince the garlic. You will use half of the chopped onions and minced garlic to cook with the lentils for about an hour to soften them. The other half of the garlic and onions you will use later. Also, I add in about a teaspoon of paprika, cumin, oregano, and curry with 2-3 pinches of salt and pepper so the lentils will soak in the flavors while they cook.2. While the lentils are cooking, chop the bell pepper and add them to the remaining half of chopped onions and minced garlic. ( So half of a chopped onion, 2 cloves of minced garlic, and one bell pepper). Also, after about 45 minutes of cooking, this is when you should add in any extra veggies you may want.
3. So after about an hour, the water should be gone and the lentils are soft. Then, mash the lentils with a fork or spoon to make them creamy like.
4. Add in the remaining half of the onions and garlic with the bell peppers to the lentils. In addition, I add in the same spices again but in quantities of 1 teaspoon for each, plus a teaspoon of thyme if you don't use italian, though not the salt! And don't forget to add in the oatmeal. Now, mix it up!
5. Make the patties and if they do not hold together well, then you can add in a bit more oatmeal (or which ever egg binder you choose..you ciuld use flax seeds, etc if you want) so that it is like a burger. Now, put the patty in the skillet with a bit of olive oil
**(if it is a non-stick skillet, no need for oil) over medium heat.
6. Cook the patty on each side about 5 minutes or until it is golden brown.
7. Serve on a plate and enjoy!
