Vegan Cupcake Bites


While my some friends and family say they are not into vegan dishes, this recipe is one of their all time favorites. I made this for a tea party with family and friends and lets just say, when I finally had a chance to make my way to the table grab a cupcake, they were practically gone!

Plus, the coconut and vanilla together make these flavorful and a well-rounded bite. Hoping you guys will enjoy these as much as we did!

A sweet vegan dessert that is small enough to pop in your mouth and great for parties with family and friends.

Serves: 24 mini cupcakes
Ingredients
  • 1 and 3/4 cup of flour
  • 1 cup of coconut sugar* (gives cupcakes a brown color)
  • 1 tsp baking soda
  • 1 cup of coconut milk*
  • 1/2 tsp salt 
  • 2 tsp vanilla
  • 1/3 cup grape seed oil*
  • 1 Tbsp vinegar

   Frosting 
  • 1/2 cup vegan butter
  • 3 cups confectioners sugar
  • 2 tsp vanilla 
  • Can top with fresh blueberries or fruit (optional)
    Instructions
    1. Heat oven to 350 degrees and line 24 mini cupcake tray with liners.
    2. Combine sifted flour with coconut sugar, baking soda, and salt in a bowl.
    3. Whisk together the coconut milk, vanilla, oil, and vinegar with the dry ingredients, but add the wet ingredients one at a time. Mix until the mixture is smooth and without lumps.
    4. Evenly distribute the cupcake mix into the 24 mini cupcake tray, filling about halfway.
    5. Bake cupcakes 15-20 minutes or until cooked though, checking with a toothpick.
    6. While cupcakes bake, mix the butter, confectioner sugar, and vanilla in a separate bowl to make the frosting.
    7. Add frosting to a plastic frosting bag.
    8. Let the cupcakes cool before frosting. Enjoy :) 
    Notes
    *You can use your preference of sugar, milk, or oil.
    **For this recipe, I have tried blending avocado and chocolate in the frosting! It adds some extra protein and creaminess, if you want to play around with this cupcake frosting recipe.
