Lentil Burgers!

One of my favorite recipes to make is lentil burgers! It is full of flavor and I use oatmeal to replace the eggs, which adds some extra nutrients too.  (There is another one that is my favorite,  Curried Sweet Potato Garbanzo Burgers. I will share soon!!) A few times I have experimented with combinations of diced carrots, tomatoes, chopped spinach, and diced *potatoes or an 8 oz can of corn and diced tomatoes which I cooked the last 15 minutes with the lentils so they were softened. (*Cook the potatoes longer..about 30 minutes). I have even replaced the bell pepper and used broccoli with carrots! It all depends on what you want to add and how creative you want to get :) So I have the basic recipe below that you can mix in your favorite kinds of veggies. Don´t be afraid to change it up! My Peace Corps Community & Moments to Remember! (Part 1)

My community! (click on the pic to see the video) The months are counting down and I made a video of my community to remember it. Also, I am really going to miss my English class and all the fun we have had since the past year and half or so! They were entertaining, especially when we shared American holidays together like Halloween, Valentine's Day, and the Fourth of July. In fact, I am really proud of them because a year before, they could not read or write in English but not they can! We only have a little more time to practice conversation, critical thinking, and more listening practice!  They dressed in costumes, if they wanted, and one was a ghost in a sheet and scared other classmates when they showed up to class for a Halloween celebration!
