Mashed Red Potatoes

These vegan red mashed potatoes are so buttery and smooth, I forget that they are vegan and remind me of my mom's non-vegan ones! Of course, this is another family favorite recipe that I have turned vegan like the cornbread stuffing . I have tried making mashed potatoes with soy and almond milk before but I really like the creaminess and taste of the coconut milk with these. It is one of my friend's secrets to some yummy Panamanian dishes, like green plantain and banana mashes, and thought to try it. So, these potatoes are so good that you need to try and taste them. So buttery and savory, sweet flavors! This dish is warming with the use of cinnamon and nutmeg to spice this dessert. This is a recipe that my mom shared with me from one of her cook books! As usual, I have made a few tweaks to make it vegan. Actually, many of my favorite childhood foods for the holidays I have adapted to a vegan's diet, like cornbread stuffing , red mashed potatoes, and lentil-loaf instead of a meatloaf. Honestly, this is a great dish for the fall and winter months (maybe I eat it as a breakfast option too, I just reduce the amount of sugar!) Best Lentil-Loaf for the Holidays

A lentil-loaf is one of my favorites to use for the holidays and I remember my first loaf at a vegan Christmas gathering with friends a few years ago. Ever since, it has been my go-to recipe and goes really well with v egan mashed potatoes and cornbread stuffing! The best part about the loaf is the glaze which helps to combine all the savory flavors together. Holiday Vegan Meal

During the holidays, adapting family recipes to a vegan's dietary needs can be a challenge especially when re-creating those delicious tasting foods that I remember as a little girl, like red mashed potatoes , roasted brussel sprouts with garlic, and a fruit crisp for dessert . One of my favorites that my mom would make was her southern style cornbread stuffing! It had a buttery, moist, and herb flavor that was cooked until a nice golden brown crust was on top. Although it was very much not vegan, I have made a few adjustments to make it dairy free while keeping a similar taste from my childhood, if not, tastier!  Now, the family gatherings bring back all of the nostalgia of good times with this delicious, vegan stuffing that is perfect to pair to vegan lentil-loaf and other popular dishes used for Thanksgiving and Christmas or other family gatherings. How to Prepare for China

As soon as I arrived in Beijing, it was like a whole different world with a unique culture and traditions. For once in my life, I was on the other side of the planet from my family and friends. I came with an open mind but also needed to know a few things about this place to help me transition easier into life in a far, far away land from home. Some things to consider and prepare for your trip or big move to China are: POLLUTION I came to China without a mask and would have liked it if I brought something with me! The masks that have N95 are the ones that filter your air and are not just a piece of cloth over your face. When I did need a mask, I still did not know much Chinese and purchasing mine here like I had planned did not end successfully.
