These vegan red mashed potatoes are so buttery and smooth, I forget that they are vegan and remind me of my mom's non-vegan ones! Of course, this is another family favorite recipe that I have turned vegan like the cornbread stuffing . I have tried making mashed potatoes with soy and almond milk before but I really like the creaminess and taste of the coconut milk with these. It is one of my friend's secrets to some yummy Panamanian dishes, like green plantain and banana mashes, and thought to try it. So, these potatoes are so good that you need to try and taste them.
